Spaghetti Carbonara Recipe

Instructions:

  1. Prepare the Pasta
    Bring a large pot of salted water to a boil. Cook the spaghetti until al dente according to package instructions. Reserve 1 cup of pasta water before draining.

  2. Cook the Guanciale
    While the pasta cooks, heat a large skillet over medium heat. Add the diced guanciale and sauté until crispy and golden brown. Remove from heat, leaving the fat in the skillet.

  3. Make the Sauce
    In a mixing bowl, whisk together the egg yolks, whole egg, grated Pecorino Romano, and black pepper. Set aside.

  4. Combine
    Add the drained spaghetti to the skillet with the guanciale. Toss to coat the pasta with the rendered fat. Slowly pour in the egg mixture, stirring quickly to prevent scrambling. Use reserved pasta water as needed to achieve a creamy consistency.

  5. Serve
    Divide the pasta among plates. Top with extra Pecorino Romano and a sprinkle of black pepper. Serve immediately.
