Melted Raclette Sandwich & Golden Smashed Potatoes
Ingredients
For the Sandwich:
- 4 slices of crusty bread (sourdough or rustic loaf)
- 8 oz Raclette cheese, thinly sliced
- 4 slices of prosciutto or smoked ham (optional)
- 1 tbsp butter, softened
- 1 tsp Dijon mustard (optional)
For the Golden Smashed Potatoes:
- 1 lb baby potatoes
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
1. Prepare the Smashed Potatoes:
- Preheat your oven to 425°F (220°C).
- Boil the baby potatoes in salted water until fork-tender (about 15 minutes). Drain and let cool slightly.
- Place the potatoes on a parchment-lined baking sheet. Gently smash each potato with the bottom of a glass.
- Drizzle olive oil over the smashed potatoes, then season with garlic powder, smoked paprika, salt, and pepper.
- Roast in the oven for 20-25 minutes, flipping halfway through, until golden and crispy.
- Garnish with fresh parsley before serving.
2. Make the Raclette Sandwich:
- Spread butter on one side of each slice of bread. On the unbuttered side, spread a thin layer of Dijon mustard (if using).
- Layer Raclette cheese and prosciutto (if using) on two slices of bread. Top with the remaining slices, buttered side out.
- Heat a skillet over medium heat. Grill the sandwiches for 3-4 minutes on each side, pressing lightly with a spatula, until the bread is golden brown and the cheese is melted.
3. Serve and Enjoy:
Slice the Raclette sandwiches in half and serve with the crispy smashed potatoes on the side. Add a fresh salad or pickles for a complete meal.
Tips:
- Substitute Raclette with Gruyère or Fontina if needed.
