       For the Pasta: 

    - 1 pound (450g) elbow macaroni or your favorite pasta shape  

      - 1 tablespoon salt (for boiling water)  


       For the Cheese Sauce:  

     - 4 tablespoons (½ stick) unsalted butter  

      - 4 tablespoons all-purpose flour  

- 4 cups whole milk, warmed  

- 1 cup heavy cream (optional, for extra creaminess)  

- ½ teaspoon garlic powder  

- ½ teaspoon onion powder  

- ½ teaspoon smoked paprika  

- Salt and freshly ground black pepper, to taste  

- 2 cups sharp cheddar cheese, grated  

- 1 cup Gruyère or Monterey Jack cheese, grated  

- ½ cup Parmesan cheese, grated  


For the Topping (optional):  

- ½ cup breadcrumbs (panko works best)  

- 2 tablespoons melted butter  

- ¼ cup Parmesan cheese  

            Instructions  

          1. Cook the Pasta:  

         1. Bring a large pot of salted water to a boil.  

        2. Add the pasta and cook until just al dente (firm to the bite). Follow package instructions, minus 1 minute for perfect texture.  

      3. Drain and set aside, reserving ½ cup of pasta water.  


2. Make the Cheese Sauce:  

1. In a large saucepan, melt butter over medium heat.  

2. Whisk in the flour to create a roux, cooking for about 2 minutes, until lightly golden.  

3. Slowly whisk in the warm milk and cream, ensuring no lumps. Cook until the mixture thickens slightly, about 5 minutes.  

4. Stir in garlic powder, onion powder, smoked paprika, salt, and pepper. Adjust seasonings to taste.  

5. Reduce heat to low and stir in the cheeses, one handful at a time, until completely melted and smooth.  


3. Combine Pasta and Sauce: 

1. Add the cooked pasta to the cheese sauce, stirring until well coated.  

2. If the sauce is too thick, stir in the reserved pasta water, one tablespoon at a time, until desired consistency is reached.  


4. Bake (Optional): 

1. Preheat your oven to 375°F (190°C).  

2. Transfer the mac and cheese to a greased baking dish.  

3. In a small bowl, mix breadcrumbs, melted butter, and Parmesan. Sprinkle evenly over the pasta.  

4. Bake for 15–20 minutes, or until the topping is golden and crispy.  


5. Serve: 

Garnish with fresh parsley or a sprinkle of paprika for presentation. Serve hot and enjoy!  


Tips for Perfect Mac and Cheese: 

Cheese Variety: Use high-quality cheese for the best flavor. Feel free to experiment with Fontina, Gouda, or Pepper Jack.  

Pasta Shape: Elbow macaroni is classic, but shells, cavatappi, or penne work great.  

Make-Ahead: Assemble the dish without baking, then refrigerate. Bake just before serving.
