Chocolate Molten Lava Cake Recipe
Servings
4 small cakes
Ingredients
- 4 oz (113 g) semi-sweet or dark chocolate, chopped
- 1/2 cup (1 stick or 113 g) unsalted butter, cubed
- 1 cup powdered sugar
- 2 large eggs
- 2 large egg yolks
- 1 tsp vanilla extract
- 1/4 cup all-purpose flour
- A pinch of salt
- Butter and cocoa powder (for greasing the ramekins)
Optional Toppings
- Vanilla ice cream
- Fresh berries (strawberries or raspberries)
- Whipped cream
- Chocolate syrup or powdered sugar for dusting
Instructions
Step 1: Prepare the Ramekins
- Preheat your oven to 425°F (220°C).
- Butter four small ramekins (6-oz size works well) and dust them with cocoa powder to prevent sticking.
Step 2: Melt Chocolate and Butter
- In a microwave-safe bowl, combine the chopped chocolate and cubed butter.
- Microwave in 20-30 second intervals, stirring after each interval, until the mixture is smooth and fully melted. Set aside to cool slightly.
Step 3: Mix the Batter
- Add the powdered sugar to the melted chocolate mixture and stir until well combined.
- Whisk in the eggs and egg yolks until the mixture is smooth and glossy.
- Stir in the vanilla extract, then add the flour and a pinch of salt. Stir gently until just combined (avoid over-mixing).
Step 4: Fill the Ramekins
- Divide the batter evenly among the four prepared ramekins.
Step 5: Bake
- Place the ramekins on a baking sheet and bake for 12-14 minutes. The edges should be set, but the center will look soft and slightly jiggly.
- Remove from the oven and let the cakes cool in the ramekins for 1 minute.
Step 6: Serve
- Carefully run a knife around the edges to loosen the cakes, then invert each ramekin onto a plate.
- Top each cake with a scoop of vanilla ice cream, fresh berries, or a dollop of whipped cream if desired.
Tips
- Be careful not to over-bake, as it’s the undercooked center that creates the "lava" effect.
- Serve immediately for the best molten center effect, as the cakes will continue to cook in the ramekin if left too long.
Enjoy your warm, gooey, chocolatey treat!
