For the Chicken:

4 boneless, skinless chicken thighs (cheaper than breasts and more flavorful!)

1 cup buttermilk (or DIY: mix 1 cup milk with 1 tbsp vinegar/lemon juice, let sit for 5 minutes)

1 tsp garlic powder

1 tsp smoked paprika

½ tsp cayenne pepper (optional for spice)

Salt and pepper to taste


For the Crispy Coating:

1 cup all-purpose flour

½ cup cornstarch (for extra crunch)

1 tsp baking powder

1 tsp onion powder

1 tsp smoked paprika

½ tsp black pepper

½ tsp cayenne pepper

1 tsp salt


For the Sauce:

½ cup mayonnaise

2 tbsp ketchup

1 tbsp pickle juice

1 tsp hot sauce (optional)

½ tsp garlic powder


For Assembly:

4 soft sandwich buns (cheap hamburger buns work great!)

1 cup shredded iceberg lettuce

8 dill pickle slices


Instructions


1. Marinate the Chicken:

1. In a large bowl, mix buttermilk, garlic powder, smoked paprika, cayenne pepper, salt, and pepper.

2. Add chicken thighs and toss to coat. Cover and refrigerate for at least 1 hour (or up to overnight for maximum flavor).


2. Prepare the Crispy Coating:

1. In another bowl, combine flour, cornstarch, baking powder, onion powder, smoked paprika, black pepper, cayenne, and salt.

2. Remove chicken from the marinade, letting excess drip off. Coat each piece thoroughly in the dry mixture. Press gently to adhere.


3. Fry the Chicken:

1. Heat 2 inches of oil in a deep skillet or pot to 350°F (175°C). 

2. Fry chicken in batches for 5–7 minutes per side, until golden brown and fully cooked (internal temperature of 165°F/74°C). Drain on a wire rack or paper towels.


4. Make the Sauce:

1. In a small bowl, whisk together mayonnaise, ketchup, pickle juice, hot sauce, and garlic powder. Adjust seasoning to taste.


5. Assemble the Sandwiches:

1. Lightly toast buns for extra flavor.

2. Spread sauce on both sides of the bun.

3. Add a layer of shredded lettuce, a fried chicken thigh, and two pickle slices.

4. Top with the bun and serve immediately!
